Our Fish Products

Great River Fish Company’s wild carp are caught daily by commercial fisherman, delivered fresh (typically alive) to our fish processing plant, and processed immediately to maintain the highest quality, freshness, taste and texture.

The carp species, Cyprinus carpio, and other freshwater fish available from Great River Fish Company are caught throughout the year. Our fish products contain no chemical additives. When ordering frozen fish, our glazing is under 1%.

We do not carry inventory which guarantees the freshest fish products, whether frozen or fresh. Our fish processing plant is set-up to produce any configuration your company requires. Here are some of our typical customer fish processing requests:

• Kitchen Ready (Fish are headed, gutted and all fins removed)

• Steaks (Kitchen Ready product is cross cut)

All of our wild fish products can be delivered scale-on or scale-off, skin-on or skin-off.

In addition to wild carp, Great River Fish Company processes other wild fish products, including buffalo, catfish (mud and channel), and sheephead.

Wild Carp Specifications

FILLET / SKINLESS

• Belly flaps well trimmed, natural cut, very few bones in
• 100% net weight
• Sizes range: 0.5 – 2.0 lbs (900 - 1500 grams) (80% 1200 grams)
• Frozen products are blast frozen individually, under 1% glazing

HEADLESS AND GUTTED

• 100% net weight
• Sizes range: 3.0 – 10.0 lbs (3500 – 6500) grams
• Frozen products are blast frozen individually, under 1% glazing

ROE

Wild carp roe can only be accompanied along with an order of other carp products. At Great River Fish Company, we typically remove the roe from the carp that our customers order, so the amount of roe on hand can vary. In general, every 10 lbs. (4.5kg) of fish processed will net 1 lb. (0.50kg) of carp roe or milt. However, some additional roe may be available from other orders where our customer did not require this product.

PACKAGING

Both fresh and frozen fish products are shipped in either 13.5x9.25x27 or 19x15x14 cardboard boxes. The average net weight per box is 50 lbs (20 kg).

Each box is digitally labeled according to each customer’s specific requirements. The boxes are then stacked on pallets. Our fresh fish is shipped in a waxed lined box and frozen fish is shipped in a cardboard box. Both use a plastic bag liner for added freshness.

For international orders, a temperature monitor is included in each container to verify our fish products maintain the highest quality.

DOMESTIC & INTERNATIONAL ORDERS

We supply retail outlets, wholesale/distributors and food processors globally with our wild carp and other freshwater fish products. Great River Fish Company is EU certified for member nations.

Typical Payment TERMS

For international orders, Great River Fish Company typically requires 30% payment with a signed purchase order and a Letter of Credit (L/C) irrevocable, transferable, for the remaining balance drawn upon confirmed shipping documents.

For domestic orders, we do offer financing based on completion of our credit application and approval by our company.
