We are excited to be one of first companies in the United States (USA) to use a high-speed Japanese fish scaler. Great River Fish Company's scaler uses high-pressure water to remove the toughest fish scales without damaging the skin or meat of the fish. For frozen fish orders, we use our nitrogen tunnel blast freezer to instantly freeze the wild caught fish. This locks in freshness, quality and texture by freezing the fish to -100c in under eight minutes. The fish are then glazed (under 1%) for long-term freshness. Great River Fish Company’s state-of-the-art fish processing facility is located just blocks from Lake Pepin, one of the largest natural cold water habitats of wild carp in the United States. Lake Pepin is fed by the Mississippi River. The lake is over one mile (two kilometers) wide and seventeen miles (25 kilometers) long. The wild carp species, Cyprinus carpio, and other fish species are caught throughout the year by local commercial fisherman. Due to our fish processing plant’s close proximity to Lake Pepin, over 95% of our wild carp arrive alive at our facility and are immediately placed on ice in large, specially-designed tubes.
